Locally, it's simply called bún bò or bún bò thịt bò, while other regions refer to it as bún bò Huế to indicate its origin. The authentic dish features rice noodles, beef brisket, pork leg, and a distinct red broth flavored with chili, lemongrass, and fermented shrimp paste. Served neatly, the broth resembles the traditional bún bò Huế in Vietnam, and it is often accompanied by chili sauce. At the canteen of the University of Massachusetts Amherst, while the bún bò lacks some authentic ingredients like blood pudding and crab paste, it has been adapted to suit foreign tastes but remains appealing.
